๐ Making ext4 even more portable

Since Linux is my main OS I really want to format a new external disk with ext4+luks. However I also live with Windows and Apple machines, where I would like to use the drive.
My plan is to format the drive as exFAT and use a large virtual disk image. The reason? When running Docker-Linux from Windows/Apple it is less of a pain mounting a file recognized by the local OS than allocating an USB port. Also I avoid the OS requests to reformat an unknown external disk every time I plug my disk. Finally, every OS native backup solution tends to favor their own filesystem
Also I like the idea of keeping things flexible. It is less scary dealing with virtual disks than splitting/resizing partitions whenever my routine/work with other OS changes. I don't care about performance since the drive will be mostly for backup and archive rarely used files.
I need to confirm two things:
I believe exFAT is better than NTFS for keeping just a few gigantic files. I want the journaling and extra safety within the virtual disks, but outside, the big container with few files, it should be light weight and quick to write. Is this the right approach? or should I go all the way to NTFS? I lost once a NTFS partition when unplugging by accident (on Linux) and I believe exFAT deals better with that case (writes must be immediate)
Which side effects should I expect from this approach? How riskier would be data loss / corruption? I do not care so much for performance and I am OK with multiple mounts when connecting the disk.
