I have used plex and jellyfin. Knowing that emby is similar to jellyfin lets count that in too.
Aiming for simplicity I find the above apps too heavy for my needs. All I need is just like what I do on my local PC. Click file, play with mpv or vlc. Choosing the subs, then enjoy.
Is there a solution similar to that for me to host on my server? So in other words a file browser and a video player but all web based.

EDIT:
I would prefer the whole system to be on a browser, so on machines without a media player, per say a public one I can still access them. Better yet if the system has authentication, but I can always use basic auth with nginx. Since things are behind a reverse proxy for me.
But for an ipad I already came up with vpn + samba in order to stream from my vps. If you have any ideas for making the files streamable would still be very welcomed.
