🐧 I'm Looking for a program that can extract text notes out of class recordings.

Hi everyone,
I don't know where else to ask this question, but since I am using Linux (Opeususe) I thought here would be appropriate.
My issues:
- I am doing an online class. It is not difficult but there is a ton of notes. Each class is about 200 minutes long.
- We are provided video recordings of each class, however it's a nightmare to study over two hours of video.
My question:
- I am looking for a program, something like OCR which could possibly extract the notes out of the class video.
- With the above I can quickly review and read my class lectures without having to go thorough 200 minutes of video.
- I am also looking for a program that can separate the audio form the video so I can speed it up and listen to it. I guess maybe Audacity can do this, but if you have a better suggestion please tell me.
Thanks! There is just too much material and I don't have the time to review it and make proper notes. A program which could extract the notes from the video would be very helpful.
Please advise if you know any such program.
Thanks!
