Pipe output to a file but overwrite file each message?

I'm used to overwriting a file by piping > output, but I have a use case for a rtl-sdr workflow that needs to overwrite the output file each message, so the only thing in the file is the last line piped to stdout. So far running dry on my google fu.

Basically using the output file as a state file for another crond task to pickup and run with.

I have another way of handling it but that involves dealing with our dev team and eating a few weeks arguing, or writing a python script as the stdout target and handling rotating the file contents each message and arguing with dev in a couple years when they change the implementation again.
