Recommendations on Linux distros/flavors?

I'm a hobbyist developer and learned how to program on macOS. My MacBook broke, so I built a PC, but I find Windows too messy to develop on, having to emulate terminals and using WSL... I've already used Linux, and its developer experience is pretty similar to what I had on macOS, so it is my desired environment. I've used Ubuntu, Pop!_OS, and Fedora.

Of all of them, the one I liked the most was definitely Fedora, but the fact that it won't run with secure boot messes me up. For my Windows drives, where I play games that need secure boot enabled, I had some problems because I had to manually sign some stuff to allow secure boot. However, when I updated packages, it broke my NVIDIA drivers, and I had to sign everything again.

On both Fedora and Ubuntu/Pop!_OS, I had this problem where the OS just stops responding, everything becomes laggy, and I can't figure out why. On Fedora, it took longer to happen, but I still got the same problem.

My PC has a Ryzen 5 5500, RTX 2060, and 16GB RAM. It runs very smoothly on Windows for development and gaming, but on Linux, I find these problems which made me switch from Ubuntu to Pop!_OS to Fedora. Now, I'm looking for other distros/flavors that might solve both my problem with secure boot and everything stopping working.

I've searched a lot about this lag problem, and most sources suggest it should be the NVIDIA drivers. I've tried updating them in all systems (since I did install the drivers when I first installed the system), removing and reinstalling them, but none of these actions solved the problem.
