Here's a fun one that I've been thinking about in recent days.
I've been fortunate to sit in on a wide range of interviews in the last little while - ranging from tier 1 helpdesk all the way up to principal Azure architect. One of the questions I like to ask is "how proficient would you say you are, on a scale of one to five, on <technology x>" and then I ask a question based on their ranking. In the past, people have been reasonably humble and/or realistic about their expertise - I'd only had a couple of people rank themselves 5/5 on anything, and by and large those candidates could at least get in the ballpark of the answer I wanted.
It dawned on me the other day, though, that I don't have a question prepared for someone who ranks themselves 5/5 on Linux - nobody's claimed that yet. If you were interviewing a candidate who said they were a 5/5 in Linux, what would YOU ask them?
