Now at that moment Alexa who had been sitting dormant & unused for quite some time suddenly said, "What would you like me to play?"
Although her response was incongruous to what I said, this still somehow spookily confirms that she's always listening to EVERYTHING. I mean I clearly didn't say her wake word which in her case is Echo. Does anything here sound like the word Echo?

Nothing there sounds like the word "Echo."
Do you suppose when no one is home she sometimes glitches and blurts out random phrase like "What would you like me to play?"
On our user end there is no way to know what kind of tourette's syndrome outburts she might have when no one's around, aside from setting up a sound-activated recorder nearby, which I am certainly not motivated enough to do.
Aside from that, all we can do is click the "Activity" tab on our Alexa app to peruse any recent commands & responses. Yet I know from experience that ledger is not all-inclusive.
According to Alexa app's "Activity" tab, the most recent activity was a few days ago when I asked her the definition of "acrimony."
