I tested GNOME 51 on Fedora 45 Beta and Ubuntu 26.10 so you can skip the release-notes guessing. The desktop lands nearly identical on both, but packaging diverges: GNOME Software vs App Center, the sushi rename, Fedora's gold-gears default against the full wallpaper set, SVG cursors absent on both, and oo7 not yet landed.
